Cocktail of the Week: Luscious Limoncello Meringue

This week we have a sumptuously sweet offering from Ben Ringwood to compliment the wonderful weather we're finally having.
A refreshing take on the limoncello martini this drink is made with vodka, limoncello, freshly squeezed lemon juice and a generous helping of lemon curd to sweeten the deal, not to mention a meringue topping made in front of your very eyes at the bar!
If you're making this one at home we suggest having one of these for pudding with a side order of shortbread. Perfect for balmy summer evenings.
25ml Fresh lemon juice
Shake with cubed ice and fine strain.
For the meringue:
2 egg whites
4 heaped spoons of white or caster sugar
Whisk until light and fluffy and spread evenly over the drink.
Sprinkle grated lemon zest over the top to finish.
